Ingredients (serves 6)

  • 1 large onion
  • 2/3 cup grated cheese
  • 1/2 cup crushed corn flakes or weetbix
  • 1/2 cup rolled oats
  • 3 eggs, lightly beaten
  • 1/3 cup pecans, chopped
  • 1/4 cup soy milk or cows milk
  • 1/2 tsp salt
  • 2tbs chopped parsley
  • 2 tbs oil
  • 800g chopped tin tomatoes (sauce)
  • 1tbs oil (sauce)
  • 2 cloves of garlic (sauce)
  • 1 tsp sugar (sauce)
  • 1/2 tsp salt (sauce)
  • 1/2 tsp basil (sauce)
  • 1/2 tsp marjoram (sauce)
  • 3 tbs chopped parsley (sauce)

Method

  1. NUTBALLS: PUT all the nut ball ingredients in and mix. Let it stand for 5 mins Roll into ball and cook in frying pan. Once cooked place into a casserole dish.
  2. SAUCE: Heat oil and add garlic. Once garlic is golden brown discard the garlic. Add tomatoes and light mash. Add salt, sugar, basil, marjoram and bring to boil. reduce heat and simmer for 8minutes uncovered. stir in parsley and then pour over the balls in casserole dish. cook on 180° for 30 mins

  • Yum! We aren’t vegetarian but my husband eats a pretty big dinner and it becomes so expensive when I’m constantly buying steak etc so it’s awsome to have meat free dinners I know he will enjoy :)
