Light and crispy, good for lunch boxes!


Ingredients (serves 4 | makes 8 Mini Pizzas)

  • 1 Packet Pita Pockets (from bread aisle in supermarket)
  • 4 Cups Devondale Grated Mozzarella
  • 2 tbsp Leggos Pizza Sauce

Method

  1. Place pita pockets on oven tray.
  2. Spread sauce, add cheese and any other pizza toppings you like and cook for 15 to 20 mins on 180.

  • These strike me as a good lunch box idea as well. I think my boy is well and truly over the sandwiches and wraps I’ve been making lately. It would be nice to mix things up with these sort of things. Thanks

  • Think I’d add some other toppings to this recipe, like pineapple, ham, onion, capsicum, etc., but like the idea of using pita pockets for the base.

  • Never thought of using Pita pockets as pizza bases, but what a clever idea. So many varieties of different toppings that you could use too. I’d love to add some bacon, onion, chilli, garlic, olives & anchovies, but I don’t know if all that would fit on one pizza pocket.

  • Great idea for a quick weekend snack or lunch. You could pop on additional tipping like ham as well.
