Ingredients (serves 4)

  • 1 small onion diced
  • 4 cups of homemade or bought Campbell vegetable stock
  • 5 small red potatoes diced
  • 220 grams lean beef diced (sirloin or tenderloin)
  • 2 sprig of fresh thyme
  • 1 teaspoon vegemite

Method

  1. Add all ingredients into a slow cooker and simmer 3 hours on low.
  2. Remove thyme stem and add to food processor and puree.

  • Make it a bit healthier by adding more veg and making your own stock. Spot on
