This is a great salad to do if you have left over roasted pumpkin.


Ingredients (serves 6)

  • 1 Washed lettuce
  • half pumpkin - roasted
  • 1/2 cup toasted pine nuts
  • 125g goats cheese
  • vinaigrette dressing of your choice.

Method

  1. chop pumpkin into cubes.
  2. Crumble or chop goats cheese into cubes.
  3. Mix lettuce, pumpkin, pine nuts and goats cheese. Drizzle with vinaigrette dressing.

Notes

I also chop the pumpkin into cubes before roasting and roast like this so there is not chopping of this in step 1. To toast pine nuts - spread on a baking sheet and place in oven until they turn colour a little. watch them as it is very easy to over cook and burn them. All quantities are approximate.
