Ingredients (makes 1 cup)

  • 270 gram roasted red capsicums in oil, drained
  • 1 garlic clove, thinly sliced
  • 1 - 2 tbls olive oil
  • 1/3 cup greek yoghurt
  • 1 spring onion, finely chopped
  • salt and cracked black pepper
  • mint leaves to finish.

Method

  1. Combine all the ingredients in a food processor and process until smooth. Season to taste.

  • I love dips in summer, they are a great entertaining option. Capsicum dip is also one of my favourite as it is full of flavour and perfect with a cracker or some warm fresh bread to enjoy with a glass of wine. This recipe is simple and doesn’t have too many ingredients which is fantastic as most of these items you tend to already have in your panty.

  • This dip was simply delicious. I didn’t read the instructions properly, and bought fresh red capsicum, then realised the recipe called for the bottled capsicum. Cooked the capsicum in the air fryer, and because my blender is a powerful one, I didn’t even peel the cooked capsicum.
    Next time I make this dip I’ll use fresh capsicum again, we enjoyed it so much just the way it was, my mistake and all.

  • Yummy, I have been trying to make some of our own dips instead of pre-packaged ones, roasted capsicum is one we always buy so might need to give this a go.
