A quick and easy creamy pasta, perfect for a midweek meal!
Ingredients (serves 4)
- 4 Cups Uncooked Penne pasta
- 1/2 Pumpkin, diced
- 2 whole bulbs of garlic
- 2 tbs Extra virgin olive oil
- 1/4 cup Pine nuts
- 1 cup Natural yogurt
- 1 cup thickened cream
- 100g Diced bacon
- 1/2 cup Garlic chives
- 1 tsp Paprika
- 1 Salt and pepper to taste
- 50g Parmesan cheese shaved
Method
- Toss diced pumpkin, whole garlic cloves and bacon pieces with the olive oil and paprika, season with salt and pepper and bake in a hot oven for approximately 15 minutes or until well roasted
- Meanwhile prepare pasta according to packet directions, when al dente, drain and set aside
- Using a bar mix or blender combine thickened cream, roast vegetables and pine nuts (dont over mix, you want it a little chunky!)
- In a fry pan or heavy saucepan, reheat the cream and roast vegetables stirring in pasta, yogurt and garlic chives. Season with salt and pepper to taste, garnish with shaved parmesan
Notes
I sometimes add a few spoonfuls of pesto if I have it handy
