Ingredients (serves 2)

  • 150gm Frozen spinach, defrosted and steamed
  • 10 large pitted olives
  • 1/2 cup Cooked wild rice
  • 1/2 cup Cooked peas
  • 1/2 small avocado
  • 50gm Feta cheese
  • 10 Brazil nuts
  • Salt and pepper to season

Method

  1. Mix the first 4 ingredients well
  2. Top salad with avocado, cheese, brazil nuts and season to taste
  3. Serve

  • Maybe try it with cashews and dont know if I’ve tried wild rice but sounds good though
