Tasty vegetarian meal. But you can also add some boiled egg, tuna or any meat or vegetables.


Ingredients (serves 4 | makes 4 )

  • 1 Cup Four
  • 1/2 Cup Water
  • 1/2 cup Vegetable oil
  • 1 tea spoon Salt
  • 300g potatoes boiled and skins removed
  • 250g leeks
  • 2 onions chopped
  • 1 tea spoon salt
  • 1tea spoon pepper
  • 1 Carrot
  • 2 Garlic chopped

Method

  1. Make dough: Combine flour, salt. Add enough water and vegetable oil to make the dough. The dough should not wet. Make into golf ball size balls. The dough ball must be covered with a wet towel and keep it at least 10 hours or overnight, before the next step.
  2. Make filling: Mash the potatoes. Finely chop the leeks and carrot. Stir fry the onions and garlic in a pan for about 4-5mins under low heat. Add the leeks and stir fry for a few more minutes. Add the potatoes. Add salt and pepper to taste.
  3. Stretch the dough ball. Put the filling into the middle of the roti, according to the shape you desire. Fold the edges to cover the filling. Heat a pan over moderate heat. Cook the roties on all sides, till each side turn a golden brown color.
