White Christmas crackles

These white Christmas crackles are sure to be a hit with the kids!

Ingredients

370 g white chocolate
90 g cranberries
150 g rice bubbles
80 g pistachios

Method

Chop chocolate, and place in a bowl over boiling water until melted. Remove from heat and set aside for 10 minutes. Stir until smooth.
Chop cranberries and pistachios, and add to melted chocolate along with rice bubbles. Stir until combined.
Line a 20 cm square tin with baking paper. Pour mixture in, place a sheet of baking paper on top and press until level. Refrigerate until set, and slice.

Oh wow, how pretty do these look! I can see myself using different coloured lollies to match party themes instead of pistachio’s and cranberrys

Oh and the old favorites of green and red glace cherries.
Perhaps some different coloured marshmallows as well.

  Yes you could always try the glace cherries, but I prefer the cranberries and pistachios as they are less sweet. Ah marshmallows – now there’s a thought the next time I make them!
