Very easy recipe for yummy pancakes for breakfast lunch and tea.


  • 1 cup Self raising flour
  • 1 cup Milk
  • 1 Egg
  • 1 tbsp Caster sugar
  • 1 tsp Vanilla
  • 1 tsp Olive oil
  • 1 tsp Butter


  1. Mix all ingredients in a bowl with a whisk until combined.
  2. Heat oil and butter on med heat in a fry pan. Pour in batter to desired size of pancake. Wait until bubbles form and pancake stiffens. Flip and continue to cook a further minute.
  3. Remove pancake to a warm plate and cook remaining pancakes until batter runs out. You can keep them warm in an oven or eat as you go.


Recipe is easily adapted to feed a crowd. We serve ours with a little butter. I loved as a child lemon and sugar on my pancakes.
