A creamy pasta with loads of flavor
Ingredients (serves 3)
- PESTO
- 20 grams Basil
- 20 grams parmesan cheese
- 20 grams Pine nuts
- 1 small clove garlic,crushed
- 50 grams olive oil
- black pepper and salt
- PASTA SAUCE
- 250 Grams pasta
- 100 grams smoky bacon
- 125 grams halloumi cheese
- 100 ml cream
Method
- PESTO.......Combine basil,grated parmesan,pine nuts and garlic in a food processor (or magic bullet/ /mortar and pestle ) Mix until roughly chopped
- Add the olive oil and mix to a paste .. It's up to you how Chunky or smooth you want it. . Season to taste with pepper and salt
- For the pasta ....Shred the bacon and cut the halloumi into smaller bits. Fry the cheese and bacon on a med. heat until lightly colored and crisp.
- Lower the temp. and add the cream and pesto . Toss in the cooked pasta and season to taste . ( sundried tomatoes can be added if desired )
