Great as a side dish but also good as a main. Easily bulked up with some chicken pieces if serving as a main.


Ingredients (serves 4)

  • 1 cup Rice
  • 1 Chicken stock cube
  • 4 Rashers bacon
  • 1 Onion
  • 1 Egg, scrambled
  • Mixed vegetables, optional

Method

  1. Prepare the rice as usual adding the stock cube to the water
  2. Dice the bacon and onion and fry in a large pan (use a pan that will fit the rice as well)
  3. Add the cooked rice to the pan and mix well
  4. Mix through the scrambled eggs. Add the vegetables (optional)

Notes

I usually prepare the rice in the microwave which makes this recipe even easier.
