Delicious gluten free savoury muffin. Add any veggies you have in the kitchen.
Add cheese if you like.
Ingredients (makes 6 Muffins)
- 4 Eggs
- 1/2 cup Coconut flour
- 3 Tbs Butter or Nutelex, melted
- 1/4 cup Water
- 1 tsp Baking powder
- 1/2 cup Grated zucchini
- 1/4 cup Diced tomato
- Salt and pepper to taste
Method
- Heat oven to 180°C
- Beat eggs until fluffy.
- Add coconut flour, melted butter or Nutelex, water, and baking powder. Mix well. Then stir in zucchini and tomato. Season with salt and pepper.
- Pour into muffin tray and bake for 25 minutes.
** get creative and change up the veggies. Olives & semi dried tomatoes would be amazing.
