Delicious gluten free savoury muffin. Add any veggies you have in the kitchen.
Add cheese if you like.


Ingredients (makes 6 Muffins)

  • 4 Eggs
  • 1/2 cup Coconut flour
  • 3 Tbs Butter or Nutelex, melted
  • 1/4 cup Water
  • 1 tsp Baking powder
  • 1/2 cup Grated zucchini
  • 1/4 cup Diced tomato
  • Salt and pepper to taste

Method

  1. Heat oven to 180°C
  2. Beat eggs until fluffy.
  3. Add coconut flour, melted butter or Nutelex, water, and baking powder. Mix well. Then stir in zucchini and tomato. Season with salt and pepper.
  4. Pour into muffin tray and bake for 25 minutes.

** get creative and change up the veggies. Olives & semi dried tomatoes would be amazing.
  • The Zucchinis are coming on thick and fast at the moment and I’ll be on the lookout for ways to use them. I’ll file this one away ready. I love a savoury muffin.
