A tasty crunch alternative to boring chips.


Ingredients

  • 6-8 small potatoes
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp paprika
  • 2 tbsp polenta
  • 1/4 tsp salt

Method

  1. Preheat oven to 200 degrees. Place a baking tray in oven to heat up as well.
  2. Cut potatoes into wedges. I usually cut them in half and then into quarters and then into eighths, sometimes twelfths depending on the size.
  3. Toss the potatoes in a bowl with the oil, seasonings and polenta. Coat well.
  4. Remove tray from oven with mitts, be careful as it will be hot. Spread the potatoes out on the tray. You should hear them sizzle. Bake in oven for 30 mins until cooked and golden. turn them after 15 mins.

Notes

We love polenta coated everything at my house. It adds such a lovely taste and texture. My kids love these wedges.
