A different twist to regular lasagna. Easily adapt to suit your own tastes and dietary requirements.


Ingredients

  • Box Curly Lasagna sheets
  • 1 packet Frozen Spinach
  • 1 tub Ricotta cheese
  • 1 Jar Favourite Pasta Sauce
  • 500g Beef Mince
  • 1 Tin Diced tomato
  • 1 Cup Grated Mozeralla

Method

  1. In a large saucepan, fill with water, sprinkle in some salt and bring to boil. Once boiling, one at a time, cook each pasta sheet. Once cooked, lay on a board.
  2. While pasta is cooking, defrost the spinach if not already done by packet instructions and then in a mixing bowl mix together the spinach and ricotta cheese. In another saucepan, cook beef mince with tin tomatoes and 4 tbsp. of the pasta sauce.
  3. Once all pasta sheets a cooked, spread some spinach/ricotta mix leaving an inch at each end. Then spread some mince mix on top of the spinach and roll up slowly. Place into a lightly greased baking dish. Pour remaining pasta sauce over the rolls and sprinkle over the grated cheese. Bake on 180 for 30min or until cheese is golden. serve with side salad. With remaining beef mince, use for pasta bolognaise, lasagne or freeze for another batch of roll-ups.

Notes

This recipe can be easily adapted to suit vegetarian or kid friendly using just traditional bolognaise mix. The options are endless!

  • This is something similar I do but I use fresh lasagne and cut to size to make cannelloni.

  • How delicious this sounds, and not hard to make either. I’m a devil for adding onion, garlic & chilli to savoury dishes, so I’d definitely add some of them to this recipe. And some extra cheese (probably parmesan) over the top, and it would be too good to share.
