Make these delicious chips at home and boost your children's (and your?) vegetable intake!
Ingredients (serves 2)
- 1 large sweet potato
- 1 tablespoon olive oil
- 1 teaspoon rosemary
- salt to taste
Method
- Use a mandolin to slice the sweet potato very thinly.
- Toss in olive oil and sprinkle with rosemary. Sprinkle with a touch of salt to taste.
- Arrange on a plate so that none of the slices are touching each other. Microwave on 80% for 3 mins and then turn over and repeat for a further 2 mins.
- They are cooked when crispy.
Notes
You may need to adjust the time microwaving these according to the thickness of the slices and the wattage of your microwave.
