After some easy salad recipes that are tasty, delicious AND filling?

With the warmer months here, everyone starts looking for easy salad recipes for lunch, dinners and barbecues with friends!  If you’ve never really liked salad recipes, we think now is the perfect time to try a few different recipes.

Easy salad recipes don’t need to be boring lettuce, tomato and cucumber – they can actually be a complete meal in themselves.

To give you a headstart on some new easy salad recipes, we’ve created a list of 5 salad recipes created by MoM Members. Check them out, make a shopping list and grab a bunch of ingredients for the weekend.

When it comes to eating well, having a stack of quick, easy and healthy salad recipes on hand is ALWAYS a great idea!

Stock up with loads and loads of fresh fruit and vegetables, crunchy nuts, crispy onion flakes or toasted coconut flakes and salad toppers and a few little pieces of goats cheese, fresh mozzarella or parmesan so you’re always ready to whip up some of your favourite salad recipes.

  • Nothing special or healthy here, I make a huge salad every day. I start with parsley and coriander, chop it up fine, and then add chopped capsicum, celery, cucumber, and then add grated beetroot, carrot and radish. Then a big handful of salad mix, some bought some fresh from the garden, also from the garden I add dandelion flower, nasturtium flower and leaves, and oregano. Then add grated turmeric and ginger, big tablespoon of tahini and half a lemon or lime to taste. Add freshly ground pepper but no salt, do not need it, but my son likes to add chilli sauce and herbamare salt and not have the turmeric or ginger. To this salad I usually add one of the following: cooked sweet potato or white potato, lentils, or mushrooms (both cooked, lentils are often sprouted then cooked), or quinoa or brown rice (cooked). Makes a really filling lunch that keeps me going for hours, no afternoon snacks needed.
